I can’t find the Custom Code function in the theme settings in the latest version. Please tell me how I can now add custom code to the <head> section.

We don’t allow this kind of direct editing for remote themes or the new built in core themes.
Customization of remote or core themes can be done with theme components though. You can go to components, add one, and then edit that directly.
Alternatively, if you want to have a theme that you can edit directly, you can “Create New” and start with a blank theme.
