I made a post in a public category and notice that when a member liked it some of their details become public. To me, that doesn’t feel like privacy by default. Is there setting I can use to supress more information about my user?

As Canapin said, each user can hide their profile in their preferences. You can also enable that by default with the Default hide profile site setting. Then, the profile is hidden for everyone, so only the user themselves and staff can see the full profile.
There is also the Hide user profiles from public site setting. This hides user profiles for visitors, while they are still visible for members of the forum.
