Sometimes when I receive notification emails, I can’t remember why. Even though the context is all in the message subject, some additional info would be nice.
Possibly add to the message footer, after the “To respond…” line, something like:
You received this message because you are subscribed to email notifications for the "XYZ" category at Meta Discourse.

This is a great idea, and although notifications are technically likely considered “transactional” and exempt from it, would help align Discourse notifications with the US CAN-SPAM Act.

Here’s some of the reasons that I can think of:
You received this message because you are watching this category.
You received this message because you are watching this topic.
You received this message because you are receiving emails for every post.
You received this message because it was a direct reply to you.
You received this message because it mentioned your name.

The only thing I’d add would be the site name, e.g., “… watching this category on Discourse Meta.”

We now support customizable e-mail templates:
Don’t like the text in our emails? Well now you can change them! (as long as you’re tracking our tests-passed branch)
Just visit Admin > Customize > Email Templates and you’ll be presented with this nifty interface:

Think this is solved here:
When Discourse sends out email notifications, it can include a block of “Previous Replies”.

This can be controlled on your user profile by the Include previous replies at the bottom of emails user setting. Out of the box we don’t include previous replies in email notifications; instead we include an excerpt of the post being replied to at the bottom of the notification. So the default for the Include previous replies at the bottom of emails user setting is never:

EDIT - But I don’t see a way to implement w/o diving into the console.
